****FOR BEST RESULTS USE: whole milk in crust. Adapted from Anna Thomas book Vegetarian epicure book 2

Recipe Ingredients for Leek and tomato quiche

1 c whole wheat pastry flour
6 T 1% milk
3 T butter
1 T oregano
1/4 t salt
1/2 t pepper
8 oz dubliner irish cheese
4 eggs
3/4 c 1 % milk
3/4 c half and half
2 plum tomatoes
2 c leeks, sliced
1/2 T grapeseed oil

Recipe Directions for Leek and tomato quiche

  1. make crust out of first 6 ingredients and parbake.

  2. saute leeks in oil

  3. mix cheese eggs milk and pour over leeks in crust

  4. top with tomato slices

  5. add cracked pepper on top

  6. Bake for 15 min at 400, and then at 325 for 30 min or until set.

  7. Line pan with parchment paper if desired.
