Recipe Ingredients for Leek & Sweetcorn Salmon Chowder

418 grams red salmon, canned
2 tbsp extra virgin olive oil
3 leeks, finely chopped
2 vegetable stock cubes, dissolved in 600 ml water
2 tbsp corn starch
450 ml skim milk
250 ml frozen corn, thawed
2 tsp ground thyme

Recipe Directions for Leek & Sweetcorn Salmon Chowder

  1. Slice white portion of leeks in half lengthways, then slice crosswise about 1/8 inch. Rinse under cold water in a collander to remove dirt.

  2. Drain the salmon, reserving the liquid. Remove skin and bones if desired and break into large chunks.

  3. Heat olive oil in a large saucepan. Add leeks and cook them gently for 5 to 6 minutes without browning them.

  4. Add the stock and reserved salmon liquid, bring up to a boil, then reduce the heat. Cover and simmer for about 5 minutes or until leeks are tender.

  5. Blend the corn starch with 3 tbsp of the milk. Add the remaining milk to the saucepan with the sweetcorn and thyme.Heat and simmer very gently for 3 to 4 minutes.

  6. Add the blended milk and cornstarch to the saucepan and cook gently stirring continually until thickened. Stir in the salmon chunks. Season with salt and pepper to your taste. Ladle into warmed bowls and serve immediately.
