Recipe Ingredients for Leek Soup

64 fl oz Soup, Chicken Broth
3 cup Leeks, (Bulb And Lower Leaf-portion)
3/4 medium White Onion
1 cup, diced Celery
4 Serving Broccoli and Cauliflower Florets Baby Carrots Mixed Vegetables
3 tbsp Olive Oil
2 tsp, leaves Thyme, Dried
2 tsp, leaves Tarragon, Dried
1 tsp Dill Weed, Dried
0.5 tsp Sea Salt
2 tsp Parsley, Dried
1.5 clove Garlic

Recipe Directions for Leek Soup

  1. Heat chicken broth (fresh or frozen if possible) in large soup pot. Chop onions and leeks - using the bulbs and stalks of leeks (be sure to wash thoroughly). Dice or slice thin - depending on preference. While broth is heating to boiling, sautee leeks, onions and garlic in a pan with the olive oil. When just softened, add chopped celery to pan and continue cooking until onions have carmelized. Add mixed vegetables to chicken broth, along with herbs. Add onion mixture to the broth and heat to boiling. Serve.

  2. This recipe is delicious as is or is wonderful with added potatoes or added broccoli/cauliflower to add some texture. If desired you may blend a bit of the veggies to create a thicker soup. This may also be modified to add milk for a cream base or tofu for a vegetarian base that is thicker and has added nutrition.
