A nice and creamy leek and scallop soup

Recipe Ingredients for Leek and Scallop Soup

2 leeks
2 cloves garlic
250 gram vegetable broth
100 gram skim milk
24 oz scallops
2 tbsp butter
2 tbsp fresh cream
3 tbsp lemon juice
1 egg yolk

Recipe Directions for Leek and Scallop Soup

  1. Heat butter

  2. Sear Scallop with garlic

  3. Remove scallop, keep warm,

  4. Fry leeks, cut julienne

  5. Add milk and Vegetable broth,

  6. When warm return the scallops,

  7. Simmer,

  8. When ready mix the lemon juice and egg yolk,

  9. Slowly add the lemon egg mixture to the soup,

  10. Add cream to the plates when serving

  11. Dress with some fresh parsley
