Recipe Ingredients for Leek & Potatoe Soup

1 large leek
3 medium potatoes
1 tablespoon olive oil
1 tablespoon butter
16 oz vegetable stock

Recipe Directions for Leek & Potatoe Soup

  1. Chop leek into fine rings and cook lightly in the olive oil

  2. dice the potatoe into cubes and add to the leek mixture once the leeks are soft

  3. coat the potatoes with oil and cook until they shine

  4. add the vegetabel stock bring to a simmer, cover and leave for 20 mins

  5. add butter and serve
