Leek and potato soup with a twist

Recipe Ingredients for leek, potato, sweet potato soup

1 cup, mashed Sweetpotato
300 grams Potatoes, Boiled
1 medium raw Leeks
2 stalk, medium (7-1/2" - 8" long) Celery
1 tbsp Butter
1 tbsp Vegetable Oil, Canola
1 clove Garlic
20 oz Vegetable Stock
1 tsp Pepper, Black

Recipe Directions for leek, potato, sweet potato soup

Cut leek in half then chop into .5cm pieces, chop celery similar size, mince garlic, dice sweet potato and potato into .5cm cubes. Sweat the vegetables until soft, add stock, bring to boil, then simmer until all the veg are cooked and the potato has slightly dissolved to thicken the soup.
