yummy as anything and under 100 calories, great for lunch or a light dinner

Recipe Ingredients for leek, potato and spinach soup

4 cups stock
1 cup leek
5 cloves garlic
1 cup spinach
2 potatoes
3 tsp avocado oil
3 tsp dried basil
1 tsp salt
1 tsp pepper
1 onion

Recipe Directions for leek, potato and spinach soup

  1. chop all veges to bite sized pieces

  2. saute onion leek and garlic in oil in a large pot

  3. add stock of your choosing (I use vegetable) to sauted mix also add spinach, potatoes and dried herbs.

  4. leave to simmer for around half an hour, then add salt and pepper to taste at the end.

  5. serve hot and enjoy
