Recipe Ingredients for Leek and potato soup or vichyssoise

3 leeks, sliced and very clean
4 small potatoes, peeled and diced
1 onion, sliced small
10 fl oz skim milk
2 pints chicken stock or water
1 salt
1 pepper
3 oz Smart Balance or butter

Recipe Directions for Leek and potato soup or vichyssoise

  1. Gently sweat onions, leeks and potato in smart balance. Keep lid on and let them sweat for 15 mins.

  2. Add fluids and seasoning. Simmer about 20 mins

  3. Whizz in food processor.

  4. Serve warm, or chill for a few hours and serve very cold.
