A leek and potato soup that can be served hot or cold.

Recipe Ingredients for Leek and Potato Soup

3 medium raw Leeks
2 tbsp Vegetable Oil Spread
1/4 tsp Sea Salt
3 potato small (1-3/4" to 2-1/4" dia) Potatoes, Red, Flesh And Skin
2 cup Natural Goodness Chicken Broth
1 cup Milk, Buttermilk, Fluid, Cultured, Lowfat
1/2 tsp Pepper, Black
1 cup Milk, Reduced Fat, Fluid, 2% Milkfat

Recipe Directions for Leek and Potato Soup

  1. Peel and dice the potatoes into small pieces. Cut the leek into small pieces.

  2. In large saucepan, melt butter or margarine over medium heat. Add leaks and salt and cook for 5 minutes. Turn down heat to medium-low and cook an additional 20-25 minutes until leeks are tender.

  3. Add potatoes and broth. Increase heat to medium-high and bring to a boil. Reduce heat to low, cover and simmer about 45 minutes until potatoes are soft.

  4. Remove from heat and either puree with an immersion blender, or puree in batches in a blender. Stir in buttermilk, milk, and pepper.

  5. Serve immediately or chill and serve cold. Sprinkle with chopped chives before serving if desired.
