Recipe Ingredients for Leek and Potato soup

3 leeks, chopped
1 1/2 lbs potatoes, cubed
1 tbsp butter
1 tbsp olive oil
4 c vegetable stock
2 c water
2 c milk
1 tsp salt
2 tsp pepper

Recipe Directions for Leek and Potato soup

  1. Melt butter and oil in large soup pot.

  2. Add leekas and potatoes, cook covered for 10 minutes over low heat.

  3. Add Stock and water.

  4. boil until potatoes are tender.

  5. Bring down to a simmer,

  6. Add milk to desired consistency.
