Light and filling potato and leek soup

Recipe Ingredients for leek and potato soup

2 leek Leeks, (Bulb And Lower Leaf-portion)
10 stalks Celery
4 tbsp chopped Shallots
2 clove Garlic
3 tbsp Cream, Fluid, Heavy Whipping
2 tbsp Oil Olive Extra Virgin
1 cup Baby Potatoes

Recipe Directions for leek and potato soup

  1. Heat oil in pot

  2. Add chopped shallot, garlic, leeks and celery. Sweat down

  3. Add 4c. water and potatoes

  4. Bring to a boil, turn down and simmer until potatoes are soft.

  5. Puree until smooth consistency.

  6. Add heavy cream and salt/pepper to taste.
