Lovely warming winter soup ideal for lunch with extras or on it's own as a low calorie snack. Weights are 1 medium potato, peeled, 1 nice fat Leek, trimmed, 1 Onion, 2 stock Cubes and the water is just enough to cover the vegetables. I use Veggie stock cubes as I am Vegetarian but traditionally the soup is made with Chicken Stock. The husband likes his made with Ham Stock.

Recipe Ingredients for Leek and Potato Soup

224 grams Skim Milk
229 grams Potato
168 grams Onion
213 grams Leek
825 grams Water
22 grams Stock Cube

Recipe Directions for Leek and Potato Soup

  1. Clean, peel and chop all the vegetables, add to a pan with everything except the skimmed milk.

  2. Bring to the boil and then simmer for 20 minutes

  3. Remove from heat and liquidise

  4. Return to the pan, add the Skimmed Milk stir through and warm to serve
