Delicious "cream" of leak and potato soup. Low in sodium and great to taste. Gives 10 servings. Takes approx. 30-40 minutes to prepare. 1 serving = 1 cup of soup

Recipe Ingredients for Leek and Potato Soup

3 medium potatoes
2 leeks
3 cups chicken stock
1 onion
3 cups water
1 tbsp olive oil

Recipe Directions for Leek and Potato Soup

  1. Dice onion and heat up in pot for 2 minutes

  2. add 3 cup of chicken stock and 3 cups of water to pot

  3. chop up leek and potatoes and add to pot

  4. bring to a boil and simmer for 20 minutes

  5. puree content to desired texture, add more broth/water to the mix to obtain a more liquid texture
