Recipe Ingredients for Leek & Potato Soup

2 tablespoons extra virgin olive oil
15 ounces skinless chicken breast
8 1/2 ounces leek, sliced
9 ounces yellow onion, diced
6 cups chicken broth, reduced sodium fat free
1 1/2 cups wine
26 ounces red potatoes, diced
51 grams leek soup mix
82 grams heavy whipping cream
68 grams skim milk

Recipe Directions for Leek & Potato Soup

Fry chicken in oil, move to side of pan when golden on each side. Add onions & leeks. Saute til soft. Add wine. Remove chicken and set aside. Put leek/onion/wine in large pot. Add broth and soup mix. Simmer. Add potatoes. Simmer with lid until potatoes are soft, about 10 mins if potatoes are diced very small. Puree mix. Dice chicken and add to soup.
