Recipe Ingredients for Leek and potato soup

205 g leek
2 tsp olive oil
55 g celery
471 g potatoes
1 tsp salt
300 g vegetable stock

Recipe Directions for Leek and potato soup

  1. Cook potato, celery and leek in olive oil until softened but not browned.

  2. Add vegetable stock

  3. Simmer for 20 minutes or until potatoes are tender.

  4. Purée if preferred or leave as is. Add salt and black pepper to taste.
