Recipe Ingredients for Leek and Potato soup

48 oz chicken stock
2 leek
3 potatoes
1 onion
1 clove garlic
2 tbsp olive oil
1 cup barley

Recipe Directions for Leek and Potato soup

Chop onion. Crush garlic and saute both in olive oil. Chop leeks and wash well before adding to onion. Dice potatoes and add. Add chicken stock. Cook slowly for about 1 hour. Add 1 cup barley and cook on a low heat until barley is cooked. Blend if required, or partially blend if thicker, chunkier soup is wanted. Serve with whole grain bread.
