Leek and Potato Soup Recipe

Light soup for main course, snack or a light lunch.

Recipe Ingredients for Leek and Potato Soup

2 leek
2 potatoes
1/2 cups corn
4 pints chicken stock
1 onion
1 clove garlic
1 tbsp thyme
1 cup barley

Recipe Directions for Leek and Potato Soup

  1. Chop onions and leeks. Chop garlic finely. Spray base of pan with olive oil (pam type spray) and gently cook onions, leeks and garlic for about 10 minutes - leeks will wilt.

  2. Add diced potatoes, corn and barley. Add Stock. Add herbs and salt/pepper to taste. Cook for about 90 mins at a low level. When ready, barley will be soft. For a thick soup, take 1 cup of soup and blend it. Alternatively, blend all soup for a smooth soup that can also be served chilled in the summer.
