Recipe Ingredients for Leek and potato soup

50 g unsalted butter
2 onion
2 garlic clove
4 leek
4 potato
1/2 tbs salt
1/2 tbs pepper

Recipe Directions for Leek and potato soup

  1. Heat the butter in a pan and sauté the onion, garlic and leek until softened.

  2. Add the potato and stock and bring to the boil.

  3. Reduce the heat and simmer for ten minutes, or until the potato is tender. Remove from the heat and allow to cool slightly.

  4. Pour the soup into a blender and blend until smooth.
