Hearty filling soup, prepare large batches and freeze individual portions for a quick supper dish

Recipe Ingredients for Leek and Potato Soup

24 oz Potato,cubed
6 oz leek, sliced
1/2 oz butter
1 pint chicken stock
1/8 tsp nutmeg

Recipe Directions for Leek and Potato Soup

  1. Melt butter in a heavy bottom pan.

  2. Slice leeks finely and sweat in pan with lid on and low heat.

  3. Cube potato (with or without peeling)

  4. Make up chicken stock from stock cube and 1 pint boiling water.

  5. Add stock to pan bring to the boil and add cubed potato.

  6. Simmer until potato is tender, them mash or liquidize depending on how chunky or smooth you prefer soup.

  7. Garnish with a little grated nutmeg or fresh black pepper.
