Recipe Ingredients for Leek & Potato Soup, Light & Lean

2 cup Leeks, (Bulb And Lower Leaf-portion)
2 medium Squash, Summer, Zucchini, Includes Skin
1 1tsp Olive Oil
2 cloves, raw Garlic
4 cup Soup, stock, chicken, home-prepared
2 Teaspoon Thyme
4 serving Sea Salt
2 medium (4-1/8" long) Onions, Spring Or Scallions

Recipe Directions for Leek & Potato Soup, Light & Lean

Saute sliced leeks in olive oil, add zucchini, garlic and scallions and saute. Add stock, chopped potato, salt & thyme. Cook at a simmer for 30 minutes until veg are soft. Puree and serve.
