A really yummy soup, great for cold days, and really easy to make.

Recipe Ingredients for Leek, potato, mushroom and cheddar soup

2 leeks, sliced
2 cloves garlic, chopped
3 yukon gold potatoes, chopped
1 tbsp butter
1 tbsp oil
3 cups of chicken stock
1/2 cup water
2 tbsp flour
1 Salt, pepper
1 tbsp yellow mustard
1 cup milk
1/2 cup shredded cheese
3 oz mushrooms

Recipe Directions for Leek, potato, mushroom and cheddar soup

Put the butter and oil into a large saucepan and add the garlic, potatoes and leeks. Cook on low heat for 5 minutes, but don't let the potatoes brown. In the meantime, add the 2 tbsp flour to hot chicken stock so it incorporates fully. Add the mustard, salt and pepper. Add to the potatoes and leek and bring to a boil. Reduce the heat and simmer for 1 hour or until the potatoes are soft. Mash the potatoes slightly so that some remain in large pieces. Add the mushrooms and cook for a further 10 minutes. Add the cheese and milk, stir to incorporate and serve hot.
