Cream of leek soup, delicious and low in calories

Recipe Ingredients for Leek-potato easy soup

140 g potato, boiled
180 g leeks, chopped
20 g butter
1 cup milk, 3.25%
1 1/2 l water
3 1/2 tbsp instant mashed potatoes, dry

Recipe Directions for Leek-potato easy soup

  1. Melt butter in a soup pot, and add leeks you washed and chopped thinly.

  2. Sautee leeks, and add the thinly chopped yellow potatoes.

  3. On a side, put 1 1/2 l water to boil (you can use chicken or vegetable stock as well)

  4. When the water boils, add to the sauteeing leeks and potato, let it boil for another 10-15 minutes, until the potatoes are tender, and then add 1 cup of milk.

  5. Blend the whole soup in a food processor or with a hand blender.

  6. Season to taste

  7. Add dried mashed potatos and blend again.
