Easy vegetarian soup to make. I have made each serving size only 1 cup to make the calculations easy.

Recipe Ingredients for Leek, Parsnip and Ginger Soup

5 c chopped parsnips
2 c chopped leeks
5 c vegetable broth
1 oz ginger
1 1/4 c dry white wine
2 T olive oil

Recipe Directions for Leek, Parsnip and Ginger Soup

  1. Saute leek and ginger in olive oil for 5 minutes on medium heat.

  2. Add chopped parsnips and cook for another 10 minutes.

  3. Add stock and wine and cook for 1.2 hour.

  4. Put in blender and puree.

  5. Serve with a swirl of melted creamy white cheese and a sprinkle of paprika.
