Recipe Ingredients for Leek, Onion and Cheddar Pie

1 leek, well-rinsed and chopped
1 1/2 onions, chopped
2 tbsp butter
2 large eggs
1 1/2 frozen pie crust
1 cup half and half
1/2 cup parsley
1/4 tsp pepper
1 tsp salt
3 1/2 cups cheddar, grated

Recipe Directions for Leek, Onion and Cheddar Pie

  1. Preheat oven to 350 degrees.

  2. Fry onions and leek in melted butter, about 10-15 minutes til soft but not brown.

  3. Whisk eggs, salt and pepper, parsley and cream. Add the onion/leek mixture and grated cheese. Stir to combine, then add to pie crust.

  4. Bake for 30-35 minutes until golden and set. Let cool 15 minutes before serving.
