Vegan risotto; brown rice can also be used and olive oil entirely skipped.

Recipe Ingredients for Leek and mushroom risotto with arborio rice

1 cup arborio rice
1 tsp olive oil
1 red pepper
1 leek
1 cup mushrooms
1 cup spinach
1 small onion
1 garlic cloves
1 tbsp fresh tarragon
1 tbsp lemon juice

Recipe Directions for Leek and mushroom risotto with arborio rice

Saute vegetables for five minutes; add enough water to cover the vegetables; cook the rice separately. Add rice in vegetables; cover and simmer an additional five minutes. (The water can be followed by a hint of white wine). -Season and serve with fresh tarragon and slices of lemon.
