280 g leeks
8 g butter
106 g egg
140 g puff pastry
75 g spring onion
60 g goat cheese
212 g sour cream

Recipe Directions for Leek and Goat's Cheese Tart

  1. cook the leeks in the butter for 10-15 minutes then squeeze out juice

  2. blind bake the pastry case

  3. mix the crumbled goats cheese with the leeks then spread across the bottom of the base

  4. sprinkle over the chopped spring onions

  5. mix the beaten eggs and the cream, then pour over.

  6. bake at 180C for 30-35 minutes until brown and firm on top
