Recipe Ingredients for Leek frittata

1 tbs butter
7 cups leeks, sliced
2 cups mushrooms, sliced
7 eggs
1 tomatoe, sliced
3 ounce container soft goat cheese

Recipe Directions for Leek frittata

  1. saute leeks and mushrooms in butter add a little salt and pepper until tender take off heat

  2. mix eggs and add to leek mixture

  3. dot cheese on top

  4. push tomatoe slices on top so that a little of the egg mixtue is over them

  5. bake at 375 for about 15-20 minutes until knife comes out clean
