This is a low carb, high fiber version of a leek and potato soup that is very filling.

Recipe Ingredients for Leek & Cauliflower Soup

3 leeks
1 T Olive Oil
3 c water
3 c organic chicken broth
2 lbs cauliflower
1 lb asparagus
1/4 c fresh parsley
1/2 t dried thyme
1/2 T Sea Salt
1 t pepper
1/2 t cayenne pepper

Recipe Directions for Leek & Cauliflower Soup

  1. Cook leeks in olive oil and pepper in a medium size sauce pan. Saute on low heat approx 10 minutes. Do not brown leeks. Browning will give leeks a burnt taste.

  2. Add water, broth, cauliflower, asparagus, salt, pepper, parsley, thyme and simmer for 20 minutes.

  3. Scoop just over half of the mix into a blender. Puree for just seconds and return to pot.

  4. You can also add ham chunks but then adjust the salt. This will also increase the sodium significantly.
