Recipe Ingredients for Leek, brocolli and sweet potato soup

2 leeks
1 stalk of brocolli
1 large sweet potato
1 chicken stock cube
1 pinch salt
1 pinch pepper

Recipe Directions for Leek, brocolli and sweet potato soup

  1. Chop the leeks, brocolli and sweet potato into cubes.

  2. Place into large pan. Add about a pint of water.

  3. Boil for around 10-15 mins until the veg are cooked, but not mushy.

  4. Drain the water and put aside. Add stock cube to the drained water.

  5. Put veg, stock, salt and pepper into a blender and blend until liquid.
