soup from leeks, carrot, corn & assorted cooked beans

Recipe Ingredients for Leek & Bean soup

4 leeks, cleaned & sliced
1 carrot, peeled & sliced
1 turnip, peeled and diced
2 cups corn kernels
2 tbsp. olive oil
3/4 cup black beans
1 cup red beans
3/4 cup white beans
1 cup chicken broth, low sodium

Recipe Directions for Leek & Bean soup

  1. Measure 1/4-1/3 cup each kind of bean and cook in plenty of water, until just tender.

  2. Clean leeks and finely slice white & light green parts.

  3. Saute in olive oil in medium casserole/soup pot..

  4. Peel & dice turnip. Add to pot.

  5. Remove corn from cob & add.

  6. Simmer until veggies are cooked.

  7. Add beans. Simmer 10 minutes.
