Bon Appetit: This makes 6 generous servings, but could easily be stretched to 8 servings when side-dishes are served.

Recipe Ingredients for Leek & Asparagus Frittata

2 T butter (or olive oil)
1 c chopped leeks
10 oz asparagus
1 c sliced shitake mushrooms
4 large eggs
1 c egg beaters
1 c diced Fontina cheese
1/2 t salt
1/2 t pepper
1/4 c grated Parmesan cheese

Recipe Directions for Leek & Asparagus Frittata

  1. Preheat broiler.

  2. Melt butter in a heavy broilerproof 10 inch skillet over medium heat. Add leeks and saute 4 minutes. Add asparagus and mushrooms, sprinkle lightly with salt, and saute until tender, about 6 minutes.

  3. Whisk eggs, 3/4 c cheese, 1/2 t salt and 1/2 t pepper in medium bowl. Add eggs to skillet, fold gently to combine.

  4. Cook until almost set. Sprinkle remaining Fontina and all the Parmesan on top.

  5. Broil until frittata is puffed and cheese begins to turn golden, about 3 minutes.

  6. Cut into wedges and serve.
