Recipe Ingredients for Lebanese Salad

8 oz Grape Tomatoes
1 cup, chopped Carrots
1 cup slices Cucumber
9 large (1" to 1-1/4" dia) Radishes
0.5 medium raw Onion Red
2 lemon yields Lemon Juice
2 clove Garlic
1 oz Mint
5 sprigs Dill Weed, Fresh
0.3 cup Parsley
1 tbsp Olive Oil
8 oz Rotisserie Breast of Chicken

Recipe Directions for Lebanese Salad

Squeeze both lemons; mince the garlic and add to lemon juice. Mince the mint, dill, and parsley, and add to the lemon juice mixture. Add the olive oil. Slice the red onion very thinly and add to the lemon juice mixture. Chop the cucumber, radishes, and carrots, and add to the lemon juice, along with the whole grape tomatoes. Let sit for a few minutes, then salt and pepper to taste. Serve topped with chunks of rotisserie chicken breast.
