Lebanese Moussaka Recipe

Lebanese moussaka is different from other moussakas which resemble meat casseroles. No cream sauce or potato crust, but rather a light, vegetarian dish, eaten on the side or as a main dish. Can be eaten hot but often served cold.

Recipe Ingredients for Lebanese Moussaka

1 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
3 clove Garlic
2 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1 medium (2-1/2" dia) Onions
200 grams Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds
1 cube Vegetable Bouillon
15 grams Tomato Sauce
1 tbsp Olive Oil
600 grams Water
1 tsp Cinnamon, Ground
5 grams Mint

Recipe Directions for Lebanese Moussaka

  1. Wash the eggplant, then cut up in small cubes.

  2. Grill the cubes on all sides in a large pan. Put aside.

  3. Chop onion and sauté in some olive oil.

  4. Add the garlic and stir until the garlic starts to release some flavor.

  5. Add tomatoes to the mixture.

  6. Sauté for several minutes without stopping stiring.

  7. Add vegetable bouillon, tomato sauxe, water and then the eggplant.

  8. Bring to a boil, then let cook on low for 15 minutes.

  9. Add chickpeas, cinnamon, and dried mint and let simmer for 10 minutes.

  10. Serve or wait and serve cool.
