Great lentil soup recipe I found on allrecipes.com. I doubled the lemon juice at the end, but lemon juice can be adjusted according to personal taste.

Recipe Ingredients for Lebanese lentil soup with collard greens

1 large onion, diced
1 tablespoon olive oil
1 tablespoon garlic, minced
1/2 teaspoon kosher salt
6 cups water
1 cup dry lentils, rinsed and drained
2 cups collard greens, chopped
1 tablespoon olive oil
2 tablespoon garlic, minced
1 tablespoon ground cumin
1 teaspoon cinnamon
2/3 cup lemon juice

Recipe Directions for Lebanese lentil soup with collard greens

Sautee onion and garlic in olive oil. Add salt and lentils and water and bring to boil. Meanwhile sautee collard greens and garlic in olive oil for about 10 minutes until wilted. Add to lentil and simmer covered about 20 minutes or until lentils tender. Add lemon juice before serving.
