Lasagna using zucchini instead of noodles

Recipe Ingredients for Leana's low carb lasagna

1 carrot
250 g ground beef
3 cloves garlic
1 onion
600 g diced tomato
3 chili peppers
2 tbsp basil
1 tbsp oregano
1 tbsp hot sauce
1 1/2 zucchini
250 g cottage cheese
1 egg
1 cup low-fat cheese

Recipe Directions for Leana's low carb lasagna

  1. Brown beef over medium heat. Add hot sauce. Add carrots. Cook for 2 minutes. Add onion and garlic. Cook for 5 minutes. Add tomato, chili peppers, oregano and basil. Turn heat to low and cook for an hour or more.

  2. Mix cottage cheese with egg.

  3. Slice zucchini length-wise.

  4. Cover bottom of rectangular pan with meat sauce. Layer zucchini on top. Put cottage cheese mixture on zucchini, followed by more meat sauce and another layer of zucchini. Put the rest of the cottage cheese on the second layer of zucchini and top with low fat cheese.

  5. Bake at 175 C for 40 minutes.
