Recipe Ingredients for Leana's Eggs with arabiatta sauce

6 eggs
800 g diced tomatoes
1 onion
6 cloves garlic
2 tbsp olive oil
3 cup spinach
100 g cream
100 g sour cream
70 g parmesan
2 tsp oregano
1 tsp thyme
1/2 tsp sea salt
1 pepper to taste

Recipe Directions for Leana's Eggs with arabiatta sauce

Fry onions and garlic together till transparent. Add diced tomatoes, oregano and thyme. Simmer for 30 minutes. In separate pan, heat spinach with some of the oil, 2 cloves garlic, and sea salt. Add to tomato mix. In a bowl, combine eggs, cream, sour cream and parmesan. Mix well. Spoon tomato mixture into 4 oven sage bowls and top with egg mixture. Bake at 160 C for 20 minutes.
