Recipe Ingredients for Lean- Stuffed Bell Peppes

6 green bell peppers
1 pound Fresh Ground Turkey 99% lean
1/3 cup chopped onion
14 1/2 ounce can whole peeled tomatoes, chopped
1 teaspoon Worcestershire sauce
3 cups Cauliflower
12 ounces Tomato Sauce No Salt Added
1/2 cup Mozzarella, Part Skim Milk, Low Moisture Cheese

Recipe Directions for Lean- Stuffed Bell Peppes

  1. Bring a large pot of salted water to a boil. Cut the tops off the peppers, and remove the seeds. Cook peppers in boiling water for 5 minutes; drain. Sprinkle salt inside each pepper, and set aside.

  2. In a large skillet, saute turkey and onions for 5 minutes, or until turkey is browned. Drain off excess fat, and season with salt and pepper.

  3. Stir in the tomatoes, "riced cauliflower" (Steam it and run it through a food processor), and Worcestershire sauce. Cover, and simmer for 10 minutes. Remove from heat, and stir in the cheese.

  4. Preheat the oven to 350 degrees F. Stuff each pepper with the mixture, and place peppers open side up in a baking dish. Pour tomato sauce over the peppers.

  5. Bake covered for 25 to 35 minutes, until heated through
