Recipe Ingredients for Lean Meatloaf

1 tsp extra virgin olive oil
1/4 cup shitake mushrooms, chopped
1 onion, chopped
1 pound extra lean ground beef
1 egg white
1 tsp soy sauce
1 tsp tabasco sauce
3 garlic cloves, chopped
1 tsp sage, chopped
1/4 tsp rosemary, dried
1/2 tsp crushed red pepper

Recipe Directions for Lean Meatloaf

  1. Preheat oven to 350 degrees. Spray a loaf pan with non-stick cooking spray.

  2. In a large non-stick skillet, heat the oil over medium heat. Add onions and mushrooms and saute until softened, about 5 minutes.

  3. In a large bowl, combine the sauteed vegetables, beef, egg white, soy sauce, garlic, herbs, and Tabasco.

  4. Shape into loaf pan, packing meat tightly to get rid of any air pockets. Bake for about 1 hour or until meatloaf reaches an internal temperature of 160 degrees.
