Recipe Ingredients for lean meatloaf

1 pound Fresh Ground Turkey Breast
1 pound Laura's 96% Lean Ground Round
1 cup Tomatoes, Sun-dried
1 cup Onions
1 cup Peppers, Sweet, Green
1 cup Carrots
1 cup Celery
1 cup Squash, Summer, Zucchini, Includes Skin
4 cloves Garlic
1 cup Bread Crumbs, Dry, Grated, Plain
1 cup Flaxseed
1 teaspoon Pepper, Black
1 teaspoon Thyme, Dried
1 cup Parsley
2 Egg, Whole
1 cup Soup, Chicken Broth

  1. Ingredients (Makes 10 servings)

  3. pound ground turkey breast

  4. 1

  5. pound ground extra lean beef

  6. 1/4

  7. cup sun dried tomatoes, chopped

  8. 1

  9. cup onion, chopped

  10. 1

  11. cup green bell pepper, chopped

  12. 1/2

  13. cup carrot, chopped

  14. 1

  15. cup celery, chopped

  16. 1

  17. cup zucchini, grated

  18. 4

  19. cloves garlic, chopped

  20. 1/2

  21. cup bread crumbs, dry

  22. 1/4

  23. cup flaxseed meal

  24. 1/4

  25. teaspoon pepper

  26. 1/2

  27. teaspoon thyme, fresh

  28. 1/2

  29. cup parsley, minced

  31. eggs, whole

  32. 1/4

  33. cup chicken broth

  34. Directions

  35. 1.

  36. put all the vegetables into the well of a food processor and chop fine

  37. 2.

  38. beat the eggs with the chicken broth

  39. 3.

  40. put all the ingredients into a large bowl and mix completely

  41. 4.

  42. place in a large oiled or sprayed loaf pan, patting firmly and tapping on the counter several times to eliminate air pockets.

  43. 5.

  44. insert a meat thermometer

  45. 6.

  46. put the loaf pan on a baking sheet and place in a preheated 350 degree oven

  47. 7.

  48. Bake for 1 1/2 hours or until the thermometer registers 150 to160 degrees. Do not overcook the meatloaf.

  49. 8.

  50. Remove from the oven and cool on a rack (do not remove the meat thermometer) for at least 20 minutes

  51. 9.

  52. Remove the meat thermometer, which should show an increase in temperature.

  53. 10.

  54. Unmold onto a warm platter and slice into 10 slices.
