1 pound Fresh Ground Turkey Breast
1 pound Laura's 96% Lean Ground Round
1 cup Tomatoes, Sun-dried
1 cup Onions
1 cup Peppers, Sweet, Green
1 cup Carrots
1 cup Celery
1 cup Squash, Summer, Zucchini, Includes Skin
4 cloves Garlic
1 cup Bread Crumbs, Dry, Grated, Plain
1 cup Flaxseed
1 teaspoon Pepper, Black
1 teaspoon Thyme, Dried
1 cup Parsley
2 Egg, Whole
1 cup Soup, Chicken Broth

Recipe Directions for lean meatloaf

  3. put all the vegetables into the well of a food processor and chop fine

  5. beat the eggs with the chicken broth

  7. put all the ingredients into a large bowl and mix completely

  8. 4.

  9. place in a large oiled or sprayed loaf pan, patting firmly and tapping on the counter several times to eliminate air pockets.

  11. insert a meat thermometer

  13. put the loaf pan on a baking sheet and place in a preheated 350 degree oven

  14. 7.

  15. Bake for 1 1/2 hours or until the thermometer registers 150 to160 degrees. Do not overcook the meatloaf.

  17. Remove from the oven and cool on a rack (do not remove the meat thermometer) for at least 20 minutes

  18. 9.

  19. Remove the meat thermometer, which should show an increase in temperature.

  20. 10.

  21. Unmold onto a warm platter and slice into 10 slices.
