Lean Meatloaf: Comfort Food without all the FAT

Recipe Ingredients for Lean Meatloaf

1 lb. lean ground beef
1 lb. lean ground turkey
1 zucchini
2 eggs
2 slices whole wheat bread
1 tsp salt
1 tsp black pepper
1 dash cayenne pepper
1 tbsp minced garlic
2 tbsp tomato paste
1 onion
1 tbsp olive oil
1 tsp oregano

Recipe Directions for Lean Meatloaf

  1. Preheat oven to 400.

  2. Chop and sautee onions in 1 tsp. olive oil with dash salt & black pepper.

  3. Grate zucchini into bowl.

  4. Mince garlic and add to bowl.

  5. Add meat, and eggs.

  6. Toast bread, drizzle with remaining olive oil, salt & pepper lightly, and sprinkle with oregano.

  7. Crumble into meat mixture.

  8. Mix well.

  9. Add 1/2 tomato paste.

  10. Mix well.

  11. Spoon mixture into deep baking dish.

  12. Top with remaining 1/2 of tomato paste.

  13. Bake for about 30 minutes, or until sides bubble and meat is cooked through.

  14. Enjoy!
