High protein, healthy and filling soup. To create a vegetarian version, omit pork and used cooked black soy beans. Use 1 tablespoon high heat oil to saute vegetables.

Recipe Ingredients for Lean and Mean Cabbage Tomato Ground Pork soup

12 ounces chicken broth (1 can)
1 pound lean ground pork
4 cups cabbage, chopped
2 white onions, chopped
3 clove garlic, chopped
1 green pepper, chopped, optional
1/2 cup chopped celery
4 cups water
2 cups tomatoes, (28-32 ounces) chopped, with juice
2 dashes hot sauce, optional

Recipe Directions for Lean and Mean Cabbage Tomato Ground Pork soup

  1. In large pan, brown ground pork, remove to paper towel on plate and cover.

  2. Pour off excess fat, leaving just enough to saute vegetables.

  3. Add chopped onion, celery and pepper, saute on medium heat for 5 minutes or until onions are soft.

  4. Add garlic and any dried spices, stir for 30 to 60 seconds.

  5. Pour in broth and gently loosen flan from bottom of pan.

  6. Add tomatoes, browned beef and cabbage.

  7. Bring mixture to boil over medium-high heat; turn down to low.

  8. Cover and simmer for about 1 hour.

  9. Season to taste with salt, pepper and/or hot sauce.
