A quick and tasty recipe to throw together and a great way to get those dark leafy greens we all know are so good for us. Chock full of vitamins and minerals. Don't let the saturated fat scare you. A little research on coconut oil will reveal the benefits of this super-food. Enjoy!

Recipe Ingredients for Lean Green Super Soup

180 g kale
1/2 bulb fennel
1 med onion
1 tbsp coconut oil
1 tbsp fennel,ground
1 tsp cumin
1 tsp basil
1/4 tsp pepper
1/4 tsp salt

Recipe Directions for Lean Green Super Soup

  1. Chop onions and fennel.

  2. Wash and stem kale.

  3. Saute onions in olive oil over med heat 2-3 minutes.

  4. Add fennel and saute 2-3 mins more or until translucent.

  5. Add 2 cups water.

  6. Add fennel and cover. Cook 5-7 minutes or until kale is soft and wilted. Don't overcook!

  7. Remove from heat and let cool 10 min.

  8. Grind fennel seeds in food processor, coffee grinder, mortar and pestle or magic bullet.

  9. Add half kale mixture to blender with 1 cup water and half the spices. Blend.

  10. Blend remaining half of kale mixture and spices.

  11. Adjust salt and pepper to taste.

  12. Enjoy! :)
