Recipe Ingredients for Lean Egg Frittata

3 large Egg, White
1 large(46 g) Egg, Whole
30 grams Onions
120 grams Vegetables, Mixed
2 large Mushrooms
50 grams Broccoli
1 1/2 tsp Canola Oil

Recipe Directions for Lean Egg Frittata

  1. Chop up onions, broccoli or squash, green peppers, mushrooms, celery or peas, thinly sliced carrots, and small amount of garlic powder and sauté in a small pan with small amount canola oil (1.5 tspns) on medium heat.

  2. Take three eggs, and separate two of them into whites and yolks. Put the two yolks in a small freezer container for the birds for winter. Take the two egg whites and add a third whole egg (three whites and one yoke ? since most of the calories are in the yolks, but the protein is in the whites) and mix them up and put a little skim milk in and a tspn of Parmesan cheese.

  3. Pour the egg mixture on top of the sautéed veggies and turn the heat down to low. Sprinkle on some more Parmesan cheese and lightly sprinkle some Tony?s Cajun spices, and put a lid on the pan and gently finish cooking for 3 to 5 minutes. Really good, and if you used enough veggies, really filling!
