1/2 cup slices Carrots
1/2 cup slices Carrots
2 stalks Celery
1 medium Onions
1 tbsp Extra Virgin Olive Oil
1 cup Light
1 cup Light

1 teaspoon Juice
1 teaspoon Juice
1 tsp, leaves Thyme, Dried
1 cup Milk, Nonfat, Fluid

Recipe Directions for Lean Cream of Broccoli Soup

  1. Ina a large saucepan over medium heat, heat the oil. Add the onion, carrot, celery, and thyme; cook, stirring occasionally, until the vegs are softened, about 5 mins. Add the broccoli and broth and bring to a boil. Reduce heat to medium-low and cover to simmer until broccoli is tender; 25 mins. Remove from the heat and add the lemon juice. Let cool for 20 minutes.

  2. Transfer to a blender in batches and puree. Return the soup to the saucepan over medium heat. Add the milk, salt, and pepper; cook, stirring occaisionally, until hot, 4-5 minutes.
