Recipe Ingredients for Lean Beef and Veggie Lasagna

1 pound lean ground beef
2 small onions
1/2 zucchini
2 medium tomatoes
2 cups marinara sauce
1 1/2 cups shredded cheese
1 1/2 cups low fat cottage cheese
2 cups broccoli
8 small mushrooms
200 grams lasagna noodles

Recipe Directions for Lean Beef and Veggie Lasagna

  1. Brown beef. In a food processor chop onions, zucchini, mushrooms and tomatoes. Add to the beef and cook with your favourite lasagna spices. Add the marinara sauce.

  2. Cook lasagna noodles. About 8.

  3. Cook broccoli and add to cottage cheese. Blend with food processor/hand mixer. Mix in about half the shredded cheese.

  4. Take 1/3 of beef mixture and put in the bottom of lasagna pan. Layer half the noodles. Top with 1/2 of the cottage cheese mixture. Repeat. Top last beef layer with the rest of the cheese.

  5. Bake at 350 until brown and bubbly. 30 min or so.
