Betty's modification of a recipe from the Dr. Oz show. Enchiladas with cabbage instead of tortillas!

Recipe Ingredients for Lean Bean Enchiladas Supreme

8 leaf, large Cabbage
1 large Onions
3 clove Garlic
1 tbsp Chili Powder
1 tsp Cumin
15 oz Black Beans
1 cup Quinoa
0.33 cup, large curd (not packed) Cottage Cheese, Creamed, Large Or Small Curd
10 oz Original Diced Tomatoes and Green Chilies
0.75 cup Green Chili Enchilada Sauce
0.75 cup 4 Cheese Mexican Shredded Cheese

Recipe Directions for Lean Bean Enchiladas Supreme

  1. Preheat oven to 350

  2. spray 13x9 baking dish with cooking spray

  3. remove core from cabbage and peel off 8 leaves

  4. cook in 4 c boiling water 5-10 minutes until soft

  5. dry on paper towels

  6. Spray large skillet with cooking spray

  7. saute onion 5-6 minutes, add garlic, chili powder, cumin, black beans, and cooked quinoa

  8. cook 2-3 additional minutes, remove from heat

  9. add cottage cheese and rotel tomatoes and mix

  10. add 1/4 C enchilada sauce to bottom of pan

  11. fill each cabbage leaf with equal amount of filling

  12. fold enchilada and place seam-side down in baking pan

  13. repeat with all cabbage leaves

  14. pour remaining enchilada sauce over enchiladas

  15. top with shredded cheese

  16. cover with foil and bake 15-20 minutes or until bubbly on top
