I use an entire package of Mrs Leepers's Rice Vegetable Twists instead of 1 1/2c dry macaroni as it's gluten free. It's also about 43 calories less.

Recipe Ingredients for Leafy's Gluten-Free Pasta Salad

1/4 cup olive oil
2 tbsp red wine vinegar
2 tbsp balsamic vinegar
1 1/2 teaspoons garlic powder
1 1/2 teaspoons dried basil
1 1/2 teaspoons dried oregano
1/4 tsp lemon juice
1 tsp splenda
1 dash ground black pepper
1 dash salt
1 1/2 cup macaroni, dry
1 red onion, chopped
4 ounce sliced black olives

Recipe Directions for Leafy's Gluten-Free Pasta Salad

  1. To make dressing, combine all except for the pasta, onion and olives.

  2. Cook pasta until al dente, rinse with cold water to stop cooking process. Combine pasta, chopped onion and olives. Add the dressing to pasta salad.

  3. Best when refrigerated over night.
