Recipe Ingredients for Leafy Spinach Lasagna

1 tbs extra-virgin olive oil
20 oz chopped spinach
1/2 onion, chopped
1/2 tsp dried oregano
1/2 tsp dried basil
2 cloves garlic, crushed
32 ounces spaghetti sauce
1 1/2 cups water
1 1/2 cups non-fat cottage cheese
8 ounces part skim mozzarella cheese
1/3 cup shredded parmesan cheese
1/2 cup fresh parsley
1/8 tsp pepper
1 egg
8 ounces lasagna noodles

Recipe Directions for Leafy Spinach Lasagna

  1. preheat oven to 350

  2. in a large pot over medium heat, saute spinach, onion, oregano, basil and garlic in olive oil. Pour in spaghetti sauce and water; simmer 20 mins.

  3. In a large bold, mix cottage cheese, mozzarella cheese, parmesan cheese, parsley, salt, pepper and egg.

  4. Place a small amount of spaghetti sauce on bottom of pan. Place 3-4 noodles on top of the sauce and top with layer of sauce mixture. Add another layer of noodles and layer with half-sauce and half-cheese mixture, another layer of noodles and repeat until all sauce is used (or pan is full).

  5. Top with more shredded mozzarella

  6. Cover with foil and bake for 55 minutes. Remove foil and bake for another 15 mins. Let sit for 10 mins before serving.
