Vitamin Packed High Protein Salad

Recipe Ingredients for Leafy Greens Quinoa Salad

1 1/3 cup quinoa
2 2/3 cup water
1 tablespoon extra virgin olive oil
1/2 teaspoon red pepper flakes
2 tablespoons apple cider vinegar
1/2 teaspoon salt
1/2 teaspoon pepper
6 cups kale, chopped
1 cup baby spinach
2 scallions, chopped

Recipe Directions for Leafy Greens Quinoa Salad

  1. Rinse quinoa in a mesh strainer. Add the water and quinoa to a sauce pan, bring to a boil, reduce heat to simmer, and cover cooking over low heat for 15 minutes until water is cooked out.

  2. Toss the warm quinoa in a large bowl with the remaining ingredients.

  3. Taste and adjust seasonings to your liking, may need more oil/ vinegar to bring it together. Serve warm or cold!
